The other night I had roasted some squash – I used the leftovers to make pasta with toasted walnuts, sausage, roasted squash, fresh parmesan and a brown butter sauce with sage.
First let me say brown butter sauce is crazy simple and such a rich, subtle flavour! Won’t be the last time I be making it.
The dish was delish and we ate the leftovers as a cold pasta salad and they were tasty that way too!
Husband and I thought that a cheese like goat cheese would really be a great addition to the dish, we’ll try that next time.
