When avocados go on sale I like to stock up and make some of our fav avocado recipes. Here is one that is fresh, flavourful and a different way to cook chicken!
Zest of 2 limes
juice of 1 lime
2 tsp oregano
1 clove garlic, minced
1/4 tsp chili powder
1/4 tsp salt
1/8 tsp pepper
4 chicken breasts, cross hatched
1. Mix all together and let chicken marinade for an hour plus.
2. Dump it all into a hot frying pan and cook until chicken is done
3. Remove chicken from heat
1 tbsp honey
1 tbsp lime juice
1 avocado, diced
4. Mix all together, pour over chicken and stir lightly to toss
Really delicious served with a coconut jasmine rice and side salad
My sister in law taught me this trick – subsitiute the water for coconut milk when cooking rice and you will have a nice fragrant lightly flavoured rice. I love to do this with jasmine rice.
