Coconut flour and blueberries are having a party in the waffle iron with quinoa flour. The aftermath is a sweet, fluffy, protein packed breakfast….or lunch….or dinner….or bedtime snack…. just saying.
1/4 cup coconut oil (in liquid state)
6 eggs, slightly beaten
1 to 2 tbsp agave syrup (or sugar if you prefer)
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 cup coconut flour
1/4 cup quinoa flour (optional)
1 cup frozen blueberries
Mix together all the ingredients (except the blueberries) until well blended then fold in blueberries.
Cook on waffle iron (I used medium heat on my cuisanart one)
